Dusseldorf Whether in Frasdorf in the foothills of the Alps or in the flat Münster – everywhere in Germany more and more restaurants are being awarded one or more stars by the Michelin Guide. There are 334 companies in the current issue that has just been published. Even the restaurants whose stars have been removed do not change the positive balance of top German gastronomy. This number is a record.
“Our Michelin inspectors are impressed by the commitment, courage and flexibility of the restaurateurs. They have defied many a crisis, always with the ambition to offer their guests an unchanged high level,” says Gwendal Poullennec, International Director of the Michelin Guide.
The industry is still struggling with some problems. Fewer opening days, hardly any lunch offers and often a single menu with a vegetarian alternative – instead of an extensive menu with a selection.
The lack of staff and high energy costs continue to affect the premium segment, which has to constantly offer top performance for the coveted stars – after all, the next guest could be a tester.
A prominent example is Vincent and Liliane Moissonnier’s restaurant in Cologne, which after 36 successful years – awarded two Michelin stars – will close in this form at the end of June. “I can’t take it anymore,” Moissonnier told the Kölner Stadtanzeiger. After a break in July, a new concept is set to continue in August.
The star restaurants in Germany

But it can also work better, as the only restaurant that was included in the illustrious circle of establishments with three stars this year proves: the Jan in Munich by Jan Hartwig. Although the head chef had already received this award at his previous place of work in the Restaurant Atelier of the Hotel Bayerischer Hof, he did not set up his own business in Munich until October 2022.
Michelin Guide: Star cuisine in kindergarten
Hartwig also has limited opening hours, which relieves the employees in particular. It is closed on weekends and reopens to guests on Tuesday evenings.
The married couple Sarah Henke and Christian Eckhardt are also breaking new ground. Henke once had a Michelin star for her Asian-inspired cuisine at Yoso in Andernach, and her husband Eckhart at Purs, also in Andernach, was awarded two stars. Now the young parents have announced where they will be working next after giving up their posts in 2022.
They open a restaurant in Boppard-Buchholz that belongs to the logistics software company EPG. For the two chefs, this should mean a better work-life balance. Also part of the concept: Henke and Eckhardt prepare the meals for the company kindergarten at the EPG headquarters near Koblenz.
For the first time, 34 restaurants can look forward to the star called “Macron”, including casual establishments such as The Noname or the Bonvivant in Berlin, the Haebel in Hamburg, but also long-established ones such as the restaurant of the Hotel Colombi in Freiburg.

As every year, restaurants were devalued again. It can also be seen from this list that it is less often the case that there are declining quality than, as a rule, economic distinctions. The Yoso, in which Sarah Henke cooked a star, loses his – but is also currently closed. Another example is the Landwerk in Wallerklingen, where the operators were unable to keep operations going.
There are no spectacular denials, like recently in France. The well-known TV chef Frank Rosin is likely to be a prominent victim of a downgrade. While his restaurant of the same name in Dorsten was awarded two Michelin stars in 2022, it now has one.
