From Silicon Valley to Europe to Tokyo, thousands of researchers and companies are experimenting with new, more sustainable options for agriculture.

Salvador, Tel Aviv, Tokyo, New York, Bangkok, Stockholm Eshchar Ben-Shitrit grew up with animals. In his childhood kibbutz, his mother was in charge of the cowshed and his father ran a turkey farm. Now, with Redefine Meat, the young entrepreneur has a start-up that also deals with nutrition. But animals should no longer die for it.

The 37-year-old is banking on the global trend of replacing meat with high-tech, and goes one step further than many other companies: He produces the meat alternative with a 3D printer.

In Israel alone, a total of 400 start-ups are researching the revolution in food production. Imagindairy has developed a technology to produce milk proteins that are identical to those found in cows. The company combines deep tech with systems biology to develop a commercial dairy product without animal proteins.
